How do we produce Iduna?
IDUNA is manufactured at the Maffei winery in Cortina sulla strada del vino, a small village surrounded by apple orchards and vineyards in Alto Adige (northern Italy), Europe’s largest connected fruit-growing region.
Each step of the production work - from the cultivation of apples, their careful harvest and further processing, up to fermentation and bottling - is done by hand by the Maffei family, under the leadership of winemaker and fruit farmer Giorgio Maffei.
Since 1987 Giorgio has been following the tradition of Charmat fermentation in his small winery. This particularly gentle method allows to maintain the original flavor of apples in each bottle of Iduna.
The "Granny Smith" apple variety used for the production, lends itself perfectly to offer an authentic and fresh taste.
